Caramel is a confectionery made by melting sugar and then optionally adding butter or fresh cream. It was the Arabs who, after taking possession of the Persian sugarcane fields in the 7th century, are said to have invented caramel around the year 1000. This discovery was apparently made by chance, while trying to improve the decanting process for sugarcane syrup.
